Luckily this has an easy answer! In the US, we normally use a "z" in these cases, and in the UK the "s" is more standard. I'd usually write "realize," "prioritize" etc. because I'm from the US!

I love this one and I've considered creating a video about it! I'd say beat around the bush is similar to irse por las ramas o dar vueltas. In this specific phrase, the implication is that the person is trying to avoid getting to the point of the conversation or maybe avoid talking about a problem. A couple of examples:

•  "Stop beating around the bush and get straight to the point!"

•  "Why are you beating around the bush? Please tell me why you didn't come to my birthday party."
